The cockle is a bivalve mollusc which is extracted from beds of fine sand and from the seabed in rias. It has a characteristic sea flavour and a high nutritional value, with an elevated protein content, minerals such as calcium, iodine, magnesium, and iron, and vitamins A, E, B3 and B9.
